Food and drink
Capocollo of Martina Franca
Of ancient and noble origin, Capocollo di Martina Franca is the most important and appreciated Apulian sausage. It is similar to what in other parts of Italy is called Coppa or Lonza. It represents one of the excellences of the Apulian gastronomy.
It is possible to organize a visit to a butcher shop where this delicacy is prepared in a traditional way. Tasting is a must.
