Cisternino is a lovely village, rightly included in the list of the most beautiful villages in Italy.

The historic center is a gem, the houses are all white, visitors are always admired by the extreme care that the Cistercines have their homes. In Cistenino you do not go to visit something specific, you go to breathe the country. In fact the two main monuments: the church Matrice and La torre Grande are not particularly representative. Cistenino is a perfect place to eat. There are many restaurants and many butchers where to choose the meat that is cooked immediately and can be eaten in the butchery that normally has a room dedicated. To find this kind of butcher shop you need to look for the written cooker ready.

In Cisternino we eat meat. It works like this: you enter a butcher shop, you choose the meat, and they roast it on a stove over high heat, then the meat is served in special rooms, or in summer on tables placed outside the butcher’s shop. Some of these butchers are organized as restaurants and offer good service, others are still very basic: for example, meat is not served on plates but on paper.

A typical lunch: appetizer, meat with side dishes, fruit, wine and water costs about € 16.00. The appetizer is a huge thing and nobody has ever risen from the table less than sated. In these places it is almost impossible to be served pasta, any vegetarians are abundantly satisfied by the appetizer based on vegetables and cheeses. To try!
